Chocolate-Covered Cherry Cookies

These cookies are rich, fudgy and decadent with a cherry center, reminiscent of a chocolate-covered cherry bon-bon.
Ingredients
  • 1 10 ounce jar maraschino cherries, undrained
  • ½ cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1½ tsp vanilla
  • ½ cup unsweetened cocoa powder
  • 1½ cups all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup sweetened condensed milk
Instructions
  1. Preheat oven to 350 degrees. Drain the cherries, reserving the juice. Spread the cherries on a paper towel and gently blot dry. Set aside.
  2. In a medium bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla and beat just until combined.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until thoroughly mixed. Slowly add the dry ingredients to the creamed mixture. Beat with the mixer until most of the flour is incorporated, then use a wooden spoon to stir in remaining flour. The mixture will be very stiff.
  4. Shape the dough into 1 inch balls. Place 2 inches apart on an ungreased baking sheet. Press your thumb into the center of each ball to make a well. Place a cherry in each center.
  5. Bake for 9-11 minutes at 350 degrees, or until edges are firm. Cool on a wire rack while you prepare the topping.
  6. For the topping, combine the chocolate chips and ½ cup sweetened condensed milk in a small saucepan. Stirring constantly, cook over low heat until chips are melted and mixture is smooth and shiny. Stir in 2-4 tsp of the reserved maraschino cherry juice. Spoon about 1 tsp of the frosting over the cherry on each cookie, spreading to cover the cherry completely. Let cool completely, or until the topping is firm and set.
