Zucchini Mozzarella Saute

A fresh and flavorful vegetable saute perfect for using up your garden bounty of zucchini, tomatoes, and onions!
Ingredients
  • 3 cups zucchini, halved lengthwise and sliced into ¼ inch slices
  • 1 cup sliced onion
  • 1 garlic clove, minced
  • ½ tsp dried basil
  • ¼ tsp dried oregano
  • ¼ tsp salt
  • 1 tbsp olive oil
  • 1 large tomato, cut into 12 wedges
  • 4 oz shredded mozzarella cheese
Instructions
  1. In a large skillet, heat the olive oil over medium heat until shimmering. Add the zucchini, onions, and garlic and saute about 5 minutes. Add the dried seasonings and salt and saute for about 2 more minutes or until vegetables are crisp-tender.
  2. Gently stir in the tomato wedges and sprinkle with mozzarella cheese. Remove skillet from the heat, and let stand until cheese is melted. Serve immediately.
